The Place Originally an online shop started in late 2018, Pâtisserie CLÉ (clé is French for ‘key’) was created by local pastry chefs Germaine Li and Joy Chiam and they opened their first brick and mortar shop few weeks ago. The small patisserie shop is located in the historic Paya Lebar Office (formerly Paya Lebar Fire Station), minutes walk away from Paya Lebar MRT Station, SingPost Centre and Paya Lebar Square.
For those who drive, there are free parking lots right outside the patisserie. The space is really designed as a takeaway concept, with no dine-in possible. That said, I like the clean and simple interior of the shop and there is only one thing to focus on – the display of the range of tarts and cakes.
The Food Both Germaine and Joy had stints previously at Michelin-starred restaurants such as Les Amis and the now-defunct Joël Robuchon Restaurant. The portion of the cakes and tarts here are available in full size, or you can just go for the petite portions for takeaways. One very important tip – call to reserve before you head down to avoid a wasted trip as the pastries of your choice can sell out quite first.
I managed to reserve three tarts during my visit. The Orh Blanc Tart (S$8) is a pretty unique fusion of French Mont Blanc and local orh nee, baked with coconut cream, fresh yam paste, vanilla chantilly and ginkgo nuts. The flavour is very light, well-balanced between the mont blanc and orh nee, though I would prefer the orh nee element to be more intense.
You can’t go wrong with the Strawberry Vanilla Tart ($8), a very popular Japanese inspired flavour. Similarly, this flavour is very light on the palate as well, which accentuate the fresh slices of strawberry.
I am a chocolate lover, so my trio of tarts has to end off with the Cognac Caramel Chocolate Tart (S$8).
The flavours of the pastries may rotate based on seasonality of ingredients.
Rants It will be great if there are a couple of tables for dine-in but I guess this might be a building constraint and business considerations.
Will I Return Again? You can expect an exquisite selection of tarts and cakes at Patisserie CLE. For me, I take heart that the tarts are not too sweet and in challenging times like this, it is heartening to learn that there are still new and promising F&B concepts which I am happy to support.
