Before you pick a place

How to Tell a Good French Pastry at First Bite


A supermarket croissant costs less than a bakery one mostly because of time and butter. Laminated dough is folded, chilled and rested again and again, sometimes over a couple of days before it reaches the oven. Skip steps and you can taste it. Three quick checks:

The shatter test Bite into a croissant. If your shirt stays clean, something went wrong. In the oven, water in the butter layers turns to steam and pushes the dough apart into an open honeycomb, which is why a good one sheds flakes everywhere.
The fork test Press a fork into a tart. The base should snap cleanly, not squash. A crust baked to deep golden brown stays crisp under cream and fresh fruit, even on a humid day.
The second-bite test If you reach for a second bite, the sugar is pitched right. In good pastry, sweetness sits in the background and lets the citrus, nuts or dark chocolate lead.
If the plate ends up covered in golden flakes, you chose well.

The Bakes You Won't Find in Paris


Classic French bakes can feel a bit foreign to older relatives, and a bit rich on a hot afternoon. So a few of our recipes keep the French technique but use flavours people here grew up with.

Orh Blanc Tart, for the aunties and uncles

A Parisian Mont Blanc starts with chestnut. Ours starts with Teochew orh nee. The crisp, buttery crust is baked with coconut cream, then topped with fresh yam orh nee, vanilla chantilly and candied gingko nuts. It looks at home on a café table, and it tastes like the orh nee that closes out a Teochew dinner.

Mango, for days too hot for chocolate

On a sweltering afternoon, fruit usually beats ganache. The Mango Berry Tart piles fresh mango and berries over baked almond cream. The Mango & Passionfruit Cake layers light vanilla chiffon with mango confit and tangy passionfruit cream. Both rely on fruit acidity, so they stay light even after a big brunch.

How to Keep French Pastries Crisp in Singapore


Singapore's humidity softens flaky pastry fast. Here's how to keep things tasting fresh at home.

Croissants: same day is best Our pastries are best eaten the day they arrive. For leftovers, refrigerate them and reheat the next day.
Reheat in the oven, never the microwave A few minutes in the oven or air fryer brings back the crunch. The microwave makes them chewy.
Cakes and tarts: straight into the fridge They're made with fresh dairy, egg and fruit, so keep them at 0-4°C and serve chilled. Don't leave them out for more than two hours, and never in a hot car.
